Baby roasted potatoes
2 lb baby potatoes (red or yellow)
3 tablespoons melted butter
1/2 teaspoon salt
2 tablespoons bread crumbs or cornflake crumbs
2 tablespoons Parmesan cheese
Cut baby potatoes in quarters and put in a greased baking dish.
Baste with some melted butter and sprinkle with salt.
Cook about 25 minutes in preheated 350F oven.
Sprinkle crumbs and cheese overtop, baste with remaining butter.
Roast another 10 minutes until potatoes are done.
If you don’t cut the potatoes, cooking time will be a little longer.
